Tuscany is Sangiovese country: the grape behind Chianti Classico, Brunello di Montalcino and Vino Nobile di Montepulciano. At its best it is savoury, cherry-scented and built for the table, with the structure to age for years. It is also the birthplace of the Super Tuscans, the rule-breakers that brought in Cabernet and Merlot, some Sangiovese-led, some (like Sassicaia) barely Sangiovese at all. Mark chooses growers who make them with restraint rather than oak and extraction.
