Bodega San Francisco Javier is a small-scale Jerez producer with two of the region's finest plots at its disposal: eight hectares in Pago Balbaína and two in Pago Macharnudo, both albariza limestone sites that have been producing Fino for centuries. Balbaína sits at ninety-two metres, the highest point in Jerez, with a sea view and yields that the bodega deliberately keeps at about half the regional average.

The wines are everything good Fino should be: lean, saline, and mineral, with the chalky albariza quality cutting through cleanly. The bodega is working through organic certification, which is no small commitment in Jerez. Worth paying attention to.
