About Valdespino
Jerez, Spain
Valdespino is one of the oldest Sherry houses, with roots going back several centuries and a reputation built on traditional methods that most of the region has now abandoned. The Inocente Fino is their most celebrated wine: a single-vineyard expression made from Palomino grown in the Pago Macharnudo, one of Jerez's finest albariza chalk sites at 135 metres altitude.
What sets Inocente apart is that it is still fermented in American oak butts rather than stainless steel tanks, which gives it a depth and complexity you simply do not find in industrial Fino. It is aged under flor in the traditional way and bottled unfiltered. If you want to understand what great Fino Sherry can be, Valdespino is the producer to seek out.
