Why Mark chose this
Drappier Éclose 2012 was released in late April 2026. It is the first Champagne aged in an ovum-shaped oak cask. The cask is made by Taransaud and holds 2,500 litres; Drappier owns three of them. The blend is 60% Pinot Noir, 40% Chardonnay. The fruit comes from the Grande Sendrée parcel at Urville in the Côte des Bar, on Kimmeridgian chalk. Aged three years in the egg, bottled in 2015, ten years on lees, disgorged April 2025. Dosage 4 g/L (extra-brut). Michel Drappier ordered the first Taransaud egg in 2010. 1 of 574 bottles disgorged in April 2025
