I like this for its ability to mature beautifully: it's recommended to drink it now through 2035, and its complexity and structure suggest it can develop further with age. Chateau de Chambert is the largest organic and biodynamic estate in Cahors, which only adds to its appeal.
Rich, smooth, sweetly-ripe, plush, inky, and serious, with dark, brooding, tannic, muscular, and grippy qualities, complemented by notes of black fruits, turned soil, tobacco leaf, and wet clay, and a long, glossy, cassis-laden finish
Pairs well with rich, meat-based meals and complex game dishes.
