Anhydrous is the newer project from the team behind Avantis Santorini, and it shows real ambition. This is a blend of three indigenous grapes, with Assyrtiko doing the heavy lifting: steely, citrus-bright and with that volcanic mineral edge Santorini does so well. The added Aidani and Athiri give it a floral lift that makes the whole thing feel a touch more perfumed and approachable than a straight Assyrtiko. Good value for what is genuinely serious winemaking.

Tasting Notes

Originally founded in 2012 as Avantis Santorini, this dynamic Greek winery was renamed Anhydrous for the 2021 vintage. Anhydrous means ‘without water’, and references the brutal growing conditions on this beautiful island. This change was instigated by winemaker Apostolos Mountrichas and his wife Lenga Grigoriadou, who craved a new challenge and reinvention. Hence, Anhydrous came to be. On the nose, this Santorini wine blends the noble steely Assyrtiko, the floral-scented Aidani and lemony Athiri grapes. On the palate, the wine is dry and balanced with refreshing acidity and a zesty character leading on to a mouth-watering finish.
