Anhydrous

Anhydrous is a small Santorini producer working with the island's own white grapes: Assyrtiko, Athiri and Aidani. The name hints at the island's parched, volcanic character. Founded in 2012 under the Avantis Santorini label and renamed Anhydrous from the 2021 vintage, the winery has quickly built a reputation for wines that reflect the basket-trained bush vines and mineral-rich pumice soils of one of the world's most distinctive wine landscapes.

The wines are typically bone dry, high in natural acidity and carry that unmistakable saline, citrus-and-stone quality that Santorini does better than almost anywhere. The top Assyrtiko bottlings are particularly serious, with real density and long, mineral finishes.
