Jerez is sherry country, and proper sherry is one of the wine world's great bargains: bone-dry Fino and Manzanilla with a salty tang that's magic with almonds, olives or fried fish. If your idea of sherry is a dusty bottle at Christmas, let me change your mind.
About Jerez
Sherry is the most under-appreciated wine in the world, and the arithmetic is absurd: bone-dry, aged for years under flor or in oxidative solera, and sold for a fraction of what comparable complexity costs anywhere else.
It is also genuinely difficult to sell, which is not a reason to stop trying. Cold, in a proper glass, with something salty, it converts people.
