Thymiopoulos

Apostolos Thymiopoulos is a young winemaker in Naoussa, in northern Greece, who has devoted his career entirely to Xinomavro, the region's indigenous red grape. Xinomavro is a difficult variety: high acid, firm tannins and a tendency to oxidise if not handled carefully. But when it works, it produces wines of real character, with a savoury depth and ageing potential that few Greek reds can match.

Thymiopoulos works with both young and old vines across several parcels in the Naoussa appellation, producing expressions that range from accessible and fruit-forward to more structured, age-worthy bottlings. Earthy, tomatoey, herb-edged and fresh, these are wines that reward a plate of food and curiosity from anyone who has not yet encountered this part of Greece.
