The Sierra de Salamanca, in the wild west of Spain near the Portuguese border, is one of the country's most exciting rediscoveries. Ancient terraced vineyards of Rufete cling to granite hillsides, farmed by a small band of growers making pale, perfumed mountain reds of real finesse.
